GRAPES: 100% PERRICONE. Historical native Sicilian vine. Refined, original and inimitable personality with a unique and surprising personality.
VINTAGE: 2021.
COLOR:  Ruby-red with garnet reflections.
BOUQUET: Marked notes of red fruits, plum jam, cherries, delicate vegetal hints that combine with memories of juniper and black pepper. Light Mediterranean mineral notes blend in perfect harmony with delicate blackberry tones.
TASTE: At the palate it is enveloping and overwhelming. Wide, with a soft sip that highlights the marked notes of ripe cherries, pink salt, spices and small dried flowers. Excellent body, articulated tannic texture that offers a good range of flavors that recall the terroir and a decisive persistence.
PRODUCTION AREA: Western Sicily. 350 meters above sea level.
TRAINING METHOD: Espalier with ''Guyot'' pruning.
HARVEST:  Mid- September.
VINIFICATION:  After a careful selection in the vineyard of the best grapes, that have reached perfect ripeness, the destemming and maceration at a highly controlled temperature (max 26 ° C) in stainless steel containers follows, in order to fully enhance the aroma of the vine. Aging takes place in small French oak vats for about 3 months before being bottled.
ALCOHOL CONTENT: 14% vol.

SERVICE TEMPERATURE: 16°-19°C. 
PAIRINGS: First and second courses based on red meat, roasts and grills, smoked cold cuts and tasty cheeses.
