GRAPES: Expression of the careful selection of vineyards particularly suited to the production of sparkling wine based grapes.

VINTAGE: 2021.
COLOR: Bright straw-yellow with greenish reflections.
BOUQUET: Intense and complex, extremely fresh with hints of Mediterranean spices. Hints of small white and yellow flowers, such as orange blossom and elderberry combine with citrus notes.
TASTE: Mineral, fresh, savory and lively. Persistent flavor with delicate notes of fresh tropical fruit. Extremely fine and elegant perlage.
PRODUCTION AREA: Western Sicily 350 meters above sea level.
TRAINING METHOD: Espalier with ''Guyot'' pruning.
HARVEST: Mid September.
VINIFICATION: Soft pressing and static decantation of the grape must. Fermentation takes place at a highly controlled temperature between 16-18 °C. Then we move on to the second fermentation in steel autoclaves. The refermentation temperature occurs between 14 and 16 ° C, with cold tartaric stabilization (4 ° C). The duration of the refermentation in autoclave is 60/70 days, after which the isobaric bottling is carried out under pressure.
ALCOHOL CONTENT: 11,50% vol.
ALLERGENS: Contains sulphites.
SERVICE TEMPERATURE: 6°-8°C.
